Summer Menu

Menu Guidelines

Two weeks with a different menu each day to be repeated for the 6 fortnights in the season.
Each daily menu consists of a soup, two main meals and a fruit based dessert to choose from.
Each meal will follow the Australian Dietary Guidelines for nutrition and portion size.
Meals can cater for a variety of tastes and needs, responding to the local community.
YamDaisy will use seasonal, plentiful ingredients and avoid expensive ones.
YamDaisy meals must be easy for a tiny staff to cook in quantity in a small but well equipped kitchen.

This is a sample menu only! We want to show the type of lovely menu a YamDaisy Cafe will provide, but for each cafe the chef will produce a menu based on local ingredients, and responding to the local needs and wants.

S         Zucchini Soup with a Cheese Scone
M1     Ratatouille with Brown Rice and Rocket Salad
M2     Chicken, Tomato and Feta Patties with Tabbouleh and Braised Carrots
D        Mango with a drizzle of Coconut Cream Sauce

Tuesday
S        Kumara Soup with a Savoury Muffin
M1    Lamb Tagine with Couscous and steamed Green Beans
M2    Chicken Curry with Rice
D       Summer Fruit and Custard Cup

Wednesday
S       Famous YamDaisy Soup with Cheese Pastry Strips
M1    Pasta with Meatballs and Vegetables
M2   Mexican Chicken Stew with Sour Cream and Corn Chips
D      Rockmelon with Creamy Cinnamon Ricotta Sauce

Thursday
S        Bean Chowder with Crusty Bread
M1    Savoury Ricotta Cakes with Fresh Tomato Salsa and Mixed Greens
M2    Chicken Skewers with Gado Gado and Rice
D       Greek Berry Dessert

Friday  
S        Famous YamDaisy Soup with Half a Cheese Toastie
M1    Tuna Croquette with Chutney, Yoghurt and Salad
M2    Pork and Black Bean Stew with Mashed Potato, Sweet Corn and Avocado
D       Golden Fruit Salad with Toasted Flaked Almonds

Week 2

Monday
S         Celery Soup with Australian Buster
M1     Dips with Felafel, Crudites and Flatbread
M2     Moussaka with Greek Salad
D        Summer Fruit Salad with Creamy Cinnamon Yoghurt

Tuesday
S       Red Bean Soup with Cornbread
M1    Corned Beef with Summer Vegetables and Mustard Sauce
M2    Zucchini Slice with Grilled Tomato and Green Salad
D      Banana Icecream and Passionfruit

Wednesday
S        Famous YamDaisy Soup with Crispy Pita Triangles
M1    Pork Chops with Texas Cowboy Caviar and Mixed Vegetables.
M2   Chicken Pie with Mash Topping, and Sautéed Greens
D      Home-made Vanilla Icecream with Lightly Cooked Apricots

Thursday
S        Vichyssoise with Melba toast
M1    Cheesy Meat Slice with Potato Salad and Green Beans
M2    Pork Sausage with Spiced Eggplant, Rice and Greens
D       Almond Biscuit and Grapes

Friday  
S        Famous YamDaisy Soup with Herb Croutons
M1    Filo Fish Pie with Green Salad
M2    Grilled Chicken Strips and Veggie Skewers, with Red Rice and Mixed Lettuce
D       Baked peaches with Rice Custard.
